Dairy Transport in Dubai: How to Keep Milk, Laban and Cheese Cold in the Heat

Every day, fresh milk, laban and yoghurt move from dairy plants and distribution centres to supermarkets, groceries, cafeterias and hotels across Dubai. Dairy is one of the least forgiving chilled loads. A few warm hours can sour milk or spoil yoghurt before it reaches the shelf, and in Dubai heat the van matters as much as the product.

This guide covers the right temperature for each dairy product, what Dubai Municipality expects from food transport vehicles, loading tips for hot-weather runs, and whether you need a chiller van, a freezer van or a truck.

Quick answer

  • Fresh milk, laban, yoghurt and cream should stay between 0°C and +4°C, as close to 0°C as possible without freezing, and never above +5°C, the limit Dubai Municipality sets for chilled food.
  • Cheese travels at 0°C to +4°C; fresh soft cheese at the cold end, 0°C to +2°C.
  • Butter travels at 0°C to +2°C chilled, or −20°C to −25°C frozen.
  • UHT (long-life) milk doesn’t need refrigeration until it is opened.
  • Frozen butter and ice cream need a freezer van, and Dubai Municipality requires frozen and chilled food to travel in separate units.

Why Dairy Needs Tighter Control Than Most Chilled Food

Pasteurisation kills harmful bacteria, but it does not make fresh milk sterile. The bacteria that remain grow faster as the milk warms, which is why fresh milk, laban and yoghurt have short shelf lives and must stay cold all the way to the customer.

Too cold is a problem as well. Fresh milk, yoghurt and cream should not freeze, because ice crystals damage the texture and the product separates when it thaws. That leaves a narrow band, roughly 0°C to +5°C, which is exactly what a chiller van is built to hold.

Like the fresh produce in our fruit and vegetable transport guide, dairy needs the right temperature for its type, not just “cold”. Our refrigerated transport temperature guide covers every food category; this post goes deeper on dairy.

The Right Temperature for Each Dairy Product

Our chiller vans hold 0°C to +8°C and our freezer vans hold −18°C to −25°C, which covers every dairy product below. Use the table to set the right temperature for your load.

UHT (long-life) milk, unopenedNo refrigeration neededAny clean van; a chiller van protects it on long summer routes

Carriage temperatures for milk, cheese and butter are from ZIM’s reefer guidelines for dairy. The +5°C limit is from Dubai Municipality guideline DM-FSD-GU63. The UHT note is from Tetra Pak. Always follow the manufacturer’s label when it differs.

Long-life (UHT) milk

According to Tetra Pak, unopened UHT milk does not need refrigeration and keeps for months. It can travel without a chiller, but in Dubai summer a closed, unrefrigerated cargo box gets very hot. On long routes, or when the load waits in the sun, a chiller van at its warmer setting keeps it protected.

Frozen dairy and ice cream

Frozen butter, frozen yoghurt and ice cream belong in a freezer van, not a chiller van. Ice cream needs the colder end of the range, −20°C to −25°C, as our ice cream transport guide explains. For other frozen loads, see our frozen food transport guide.

What Dubai Municipality Expects From Food Transport Vehicles

Dubai Municipality’s guideline DM-FSD-GU63 (version 2, August 2023) sets the rules for vehicles that carry food in Dubai. These are the points that matter most for dairy:

  • Chilled food must be kept at 5°C or less at full load, and frozen food at −18°C or lower.
  • Mixed frozen and refrigerated loads need separate units.
  • Food transport vehicles need an annual Dubai Municipality permit, issued after inspection at an accredited vehicle testing centre and verifiable on the Foodwatch platform.
  • Temperature monitoring devices must be calibrated every year by an EIAC-accredited company.
  • The cargo area must be cleaned before loading, and rental providers must clean and disinfect vehicles between short-term leases.
  • Doors must seal fully with no air leaks, and the cargo area needs spacers so air can circulate.

Loading Tips for Dairy in Dubai Heat

  1. Pre-cool the van. Switch the unit on and bring the cargo area down to your set temperature before the first crate goes in. Our UAE summer cold chain tips explain why this matters.
  2. Load dairy straight from the cold store. A chiller van holds temperature; it is not built to cool down milk that has already warmed up on the loading bay.
  3. Load fast and keep the doors shut. Stage the crates next to the van so the doors stay open for the shortest time.
  4. Leave room for air. Don’t block the cooling unit or pack crates tight against the walls; cold air needs to move around the whole load.
  5. Keep butter and cheese away from strong smells. They pick up odours from fish, onions and other strong-smelling loads.
  6. Plan multi-drop routes. Group nearby drops, deliver fresh milk and yoghurt early in the route, and run early in the morning when you can, before the hottest part of the day.
  7. Check the temperature at loading and at delivery. A written record helps if a customer or an inspector questions the load later.

Chiller Van, Freezer Van or Truck for Dairy?

The right vehicle depends on how much you move, how many stops you make and whether any of the load is frozen. For a full side-by-side comparison, read our guide on chiller van vs refrigerated truck.

  • Chiller van (1 to 3 ton): best for daily milk, laban and yoghurt runs to groceries, cafeterias, cafes and hotels, and for multi-drop city routes. Available with a driver or self-drive.
  • Freezer van (1 to 3 ton): for frozen butter, ice cream and frozen desserts at −18°C to −25°C.
  • High roof van: useful when you stack crates tall, in chiller or freezer versions. See our high roof van rental.
  • Chiller truck (3 to 5 ton): best for bulk runs from a dairy plant or importer to supermarkets and wholesalers. See our chiller truck rental.

If you deliver both chilled and frozen dairy, plan two vehicles or two runs. Our chiller vans and freezer vans are separate vehicles, and Dubai Municipality requires separate units for mixed frozen and refrigerated loads. Our chiller van vs freezer van guide explains the difference.

Vans start from AED 250 to 400 per day and trucks from AED 500 to 650 per day; your final quote depends on vehicle, duration and route (what affects the price). Dairy deliveries usually run every day, so a monthly plan (vans from AED 3,000 to 4,000 per month) often costs less than daily hire, as our monthly vs daily rental guide shows. Not sure about size? Use our vehicle size guide.

Frequently Asked Questions

What temperature should milk be transported at?

Fresh milk travels best between 0°C and +4°C, as close to 0°C as possible without freezing. Dubai Municipality requires chilled food to stay at 5°C or less, so never let it go above +5°C.

Can a chiller van carry yoghurt, cheese and butter together?

Yes, they all travel in the chiller range. Keep fresh soft cheese and chilled butter at the cold end, 0°C to +2°C, and keep butter and cheese away from strong-smelling loads.

Does UHT milk need a refrigerated van?

Unopened UHT milk does not need refrigeration. In Dubai summer, though, a chiller van protects it on long routes or when the load waits in the heat.

Can frozen and chilled dairy travel in the same van?

No. Dubai Municipality requires separate units for mixed frozen and refrigerated loads. Use a chiller van for fresh dairy and a freezer van for frozen butter and ice cream, or plan two runs.

Do you rent chiller vans with a driver?

Yes. You can rent a chiller van with a driver or self-drive, on daily, weekly or monthly terms, 24/7.

Do you deliver dairy outside Dubai?

Yes. We cover all 7 emirates, with a branch in Mussafah for chiller van rental in Abu Dhabi and regular service in Sharjah.
